Topic: Cole Slaw

Additional Comments: We had a post a week or so ago about potato salad, so I thought I'd add one for Cole Slaw.  My mom used to make the BEST.  She never wrote her recipe down so it went to the grave with her.  No matter how I try I can't make it like she did.  I love good slaw.  What's the secret?  Do you chop your cabbage or shred it?  What do you add to yours?  I want to make some this weekend...so let's hear it.  A restaraunt I ate at in Florida a few weeks ago adds mandarine oranges to their slaw.  It was delicious!

And then the "traditional" cole slaw here in Texas is usually a version of these ingredients....

    Shredded green and purple cabbage
    Shredded carrots
    sugar
    salt
    mayonaise
    buttermilk

Not sure if this is popular outside Texas or not but many people enjoy eating this as a condiment on chopped beef sandwiches as well. Lots of sandwiches now that I think of it. Houstons (an awesome restaurant for a chain) puts this on their fish sandwich.

  • Oh yeah I never put it on a sandwich till I moved to FL. On Barbeque sandwich, delish! //serialmom
  • Yeah, some folks put slaw on hotdogs and BBQ sandwiches here in Georgia too. GJ

I was looking for a recipe I used last year to post here but can't find it. It has Asian style flavors to it. I guess the new word would be "fusion". Winging it.............

Shredded cabbage, matchstick cut jicama, shredded carrots, slivers of red and yellow peppers.

Tossed in a dressing made with rice wine vinegar, sprinkling of sugar, a few dashes of sesame oil, a smattering of red pepper flakes and garnished with sesame seeds. I put some sauteed shrimp on top and made it an entree salad. Almond slivers would make a nice topping as well I think.

Beware, a little sesame oil goes a long way!!!

  • Well cook...what in the WORLD is jicama? That's a new one on me. I'm gonna hafta look that one up. GJ
  • GJ, it's a root vegetable. It has the consistency of a potato, only lighter, a little less starchy, and much sweeter. It's *fabulous* in a mixed vegetable salad with grilled chicken. //SqueezeMe
  • And it is pronounced Hick a ma. Don't make the mistake I did when I first saw it on the menu and the very rude waiter corrected me!!! -cook

I use 2 cups of sugar to 1 cup of oil & 1 cup of vinegar & about 1/2 cup of water.  Stir until sugar is completely dissolved.

For the slaw itself, I shred cabbage & carrots and add chopped peppers (all colors if available or just green) & lots of celery.  Add celery seed and salt & pepper to taste.

This can be frozen or will keep in fridge for at least 2 or 3 weeks.

I make gobs of it & freeze some & have some fresh.

  • OK that sounds great and easy too, I'm going to try this. I always thought mayo was a key ingredient to good slaw but see that a lot of you don't use it at all. AND I didn't know you could freeze cole slaw. GJ

I have never made slaw, it's not one of my favorite side dishes.  I particularly don't care for slaw that is saturated in mayo.  I think a little mayo goes such a long way.  I prefer the oil/vinegar based slaws, especially one I had in Phoenix that was mixed with peanuts and sesame oil.  That was terrific.

  • I love this Asian cole slaw and thought you might like to try it (recipe inside). //SqueezeMe

Here is one we used to like.  The title is Most Popular Slaw.

Shred one med head of cabbage and alternate in layers with 1 med onion.

Top this with 7/8 cup of sugar.

Heat 1 cup of vinegar,   3/4 cup of oil .  1 teas each,of  salt, dry mustard and celery seed.

When mixture boils, pour over slaw and let it stand 4 to 6 hours.  Delicious sweet sour taste.

Here is very popular one from Todd Wilburs book Top Secret Recipes - KFC recipe

I like to make cole slaw like my mom does, but I usually have to call her and get reminded of the proportions of things for it.   She mixes vinegar and sugar and adds celery seeds......

  • Hea Mz Chris, hope you are doing well and all of your kiddos are too! mm3
  • No mayo? GJ
  • Nope, no mayo. It is more of a tangy cole slaw. Kids are fine - trying to get it thru their heads the baby is not a doll so they can't play with her like one lol mzc
  • oh yeah, it has oil too like serialmom's recipe, except don't heat it.... maybe I should call my mom rofl mzc

Mine is really easy and the kids love it.  I use the preshredded cole slaw that comes in a bag and add mayo and bacon pieces.  I think the key is fresh bacon, not the jar bits.

    Replies: (list all replies)

  • That's it? Mayo and bacon bits? Wow! I'll have to try that. Never had it with bacon but sounds yummy! Thanks! GJ
  • I was thinking of trying it with sausage, instead of bacon, this weekend. With my big family, I always make extra sausage or bacon when I am making it in the am, so I use the extra for other things later. I don't care for sweet slaw. That's just me. mm3
  • Also, it is good on fish tacos. mm3
  • Funny you should mention fish tacos. Hubby & I had tacos last night and the box had a recipe for fish tacos. I told him that doesn't even sound good to me. I love fish and I love tacos but together they just don't sound very tasty. Lots of Mexican menus have them on there. Guess I'll just have to taste one to see what they taste like. GJ
