I came home and looked for my recipe that a dear neighbor gave me many, many, many years ago.  I couldn't find it. :-(   But I did find the exact recipe online.  (Thank heavens for the internet!)  The second recipe is one of my sister's.  I found it while looking for the recipe for Forgotten Cookies.  They are yummy too!  And I still only have some store bought lemon wafers.  Now I want both of these!

Forgotten Cookies

The name "Forgotten Cookies" comes from leaving these cookies to bake in the oven overnight after it's been turned off.

INGREDIENTS:

PREPARATION:

Preheat oven to 350°. Beat egg whites until foamy. Gradually add sugar and continue beating until they hold stiff peaks. Add salt and vanilla. Stir well. Stir in pecans and chocolate chips. Cover cookie sheet with foil and grease with butter or margarine.
 
Drop by teaspoonfuls onto the foil. Put in oven then turn the oven off. Leave overnight in oven with door closed.  (I never used the pecans when making these, just the mini-chocolate chips.)
 
BANANA CHIP COOKIES
 
1 cup shortening
1 1/2 cups sugar
2 eggs
1 tsp. vanilla
2 3/4 cups flour
1 1/2 tsps. baking soda
1/2 tsp. salt
1/2 cup buttermilk
1 cup mashed bananas (about 3)
1 cup chopped nuts
12 ounces chocolate chips
 
Cream shortening and sugar in a large bowl.  Add eggs and vanilla, blend well.
 
Combine flour, baking soda and salt; add alternately with buttermilk and mashed bananas to creamed mixture.
 
Stir in nuts and chocolate chips.  (Dough will be soft) 
 
Drop by teaspoonful onto greased cookie sheet.
 
Bake at 375 degrees for 8 - 10 minutes.
 
Makes about 7 dozen cookies.

My dad LOVED Forgotten Cookies.  He would ask me to whip up a batch on a regular basis.  The banana chip ones sound great.  I saved them to my recipe style.

Here are the Ranger Cookies Ula asked about.

1 cup shortening (butter or margarine can be used)

1 cup brown sugar

1 cup granulated sugar

2 eggs

1 tsp. Vanilla

2 cups flour

1 tsp. Baking soda

˝ tsp. Salt

2 cups oatmeal

2 cups cornflakes

1 cup coconut

 

Cream sugars, eggs & shortening/margarine and vanilla.  Add other ingredients and mix well.  Bake @ 375 for 8-10 minutes.

  • Your recipe for Ranger cookies sounds good too. Corn flakes??? As I said in the other topic, I've never met a cookie that I didn't like so even a cookie with corn flakes will probably be one I like!! Thanks for the recipe! eom mags

    I have never had a cookie like the Forgotten ones. They sound interesting, but I really don't think I could go to sleep if I knew there were cookies in my oven!!

    When I read the banana chip recipe, I first thought you'd found a good use for those dried banana chips. Those are so gross, but I never thought of baking with them. Those cookes sound good too. The only time I've had bananas mixed with chocolate was on a banana split, and I did like that.

  • Lol, you've got to forget the cookies are in the oven so that they can crisp up as the oven cools down. You've got to like merangue or you won't like those cookies. I know with banana nut bread you use the bananas that are turning too brown to use for anything else. I guess the Banana Chip cookies would be a good use for older bananas too. I know my sister doesn't throw anything out so she would use them for cookies or making bread. Lol, if I'm at her house or she is at mine I have to hide a food item that I'm going to throw out or she has a fit. She always has a use for it. eom mags
